Basil pesto salmon
1 piece NZ salmon
Basil pesto
1/4 cup Quinoa
Brocolli
1/2 Corn cob
Handful of mesclun
Goats cheese feta
Thinly sliced red onion
Olive oil
Lemon juice
Salmon: Grill or bake salmon with the pesto smeared over the top until it flakes
Quinoa: Boil water, add quinoa. Cook until tails appear. Drain. You can cook corn cob or use raw. Cut the corn off the cob. Stir into quinoa with salt & pepper, freshly chopped herbs, a little olive oil & lemon juice.
Mesclun salad: combine mesclun, onion, feta, 1/2 T olive oil and juice of half small lemon.
Brocolli: steam or boil until just tender..add lemon juice/olive oil to your tastes
